caramel syrup

i think i've said about 284 times how awesome my in-laws. this recipe is another one from them. my mother-in-law, to be exact. this summer, while staying there, she whipped up some caramel syrup per my husband's request. how he had never told me about it or let me taste it, i will never know. he was only in trouble until it hit my tastebuds and they exploded. bestsyrupever.com.
you need:
1 cup warm water
2.5 cups sugar (you can substitute some for brown sugar. i did 1/2 cup brown and 2 cups white)
1 can evaporated milk
1 tsp. vanilla

in a saucepan, heat 1/2 cup sugar until browned. add warm water. it will bubble right up. boil it for a minute or two until the sugar is dissolved. next, add the other 2 cups of sugar and boil 3-4 minutes until it is all dissolved. take off heat and stir in milk and vanilla. the end! so so easy! it is seriously so yummy. i'm thinking about trying it with sweetened condensed milk. wouldn't that be heaven?? pretty sure we're having pancakes for dinner...
