Buttermilk Syrup

This is the perfect addition to the Pancake and Waffle recipe I posted.  My kids would practically drink it!  Give it a try tomorrow morning.

Buttermilk Syrup
1 1/2 C. sugar
3/4 C. buttermilk
1/2 C. butter
2 T. corn syrup
1 tsp. baking soda
2 tsp. vanilla extract

 In a saucepan combine sugar, buttermilk, butter, corn syrup, and soda.  Bring to a boil and cook 7 minutes.  Remove from heat and add vanilla.  Pour over warm waffles, pancakes, french toast, or even vanilla ice cream!!  Yum!  *NOTE* Be sure and use a large pan as this bubbles and foams A LOT!! 

Pancakes or Waffles from Scratch



Pancakes and Waffles
2 C. flour
2 C. milk
2 eggs, seperated
1 T. baking powder
1 tsp. salt
1 T. oil

Combine dry ingredients then add milk, egg yolks, and oil.  Whip egg whites until soft peaks form, fold into batter.  Pour onto hot griddle and cook until golden brown.  Eat with butter and warm syrup.  Enjoy!

Egg Nog Waffles or Pancakes

So, this morning my husband asked me if I could make him Egg Nog waffles. I told him I never had, but that I'm sure Google could help me out with that! So off I went to search, I picked the first recipe that came up because a) it sounded easy and b) it had pretty good reviews. After making the first waffled and snitching off a corner of it I thought it wasn't very Egg Noggy, and duh, if I'm going to eat a waffle with Egg Nog in in it, I want to taste the Egg Nog! Since I was making regular pancakes for my kids (aka pannycakins) I decided to add a little bit more Nog to thin my batter and throw some on the griddle, the results were Mmmm-mmmm GOOD! We decided that was a better way to go! Add a little butter and powdered sugar and you're in for a treat!

2 cups flour
2 cups eggnog
2 large eggs - beaten
1 Tablespoons vegetable oil
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt 
(Optional: You can add a little bit of nutmeg and cinnamon to enhance the flavor!)
 
**In a large bowl, mix the flour with the baking powder, baking soda, and salt.
In a separate bowl, mix together eggnog, eggs and oil until well mixed.
Add wet ingredients to dry ingredients. Mix until smooth. 
Cook waffles in well-greased preheated waffle iron according to manufactures instructions or add a little bit more Egg Nog to thin the batter and turn them into pancakes!

Serve with butter and powdered sugar.

caramel syrup

i think i've said about 284 times how awesome my in-laws. this recipe is another one from them. my mother-in-law, to be exact. this summer, while staying there, she whipped up some caramel syrup per my husband's request. how he had never told me about it or let me taste it, i will never know. he was only in trouble until it hit my tastebuds and they exploded. bestsyrupever.com.
you need:
1 cup warm water
2.5 cups sugar (you can substitute some for brown sugar. i did 1/2 cup brown and 2 cups white)
1 can evaporated milk
1 tsp. vanilla

in a saucepan, heat 1/2 cup sugar until browned. add warm water. it will bubble right up. boil it for a minute or two until the sugar is dissolved. next, add the other 2 cups of sugar and boil 3-4 minutes until it is all dissolved. take off heat and stir in milk and vanilla. the end! so so easy! it is seriously so yummy. i'm thinking about trying it with sweetened condensed milk. wouldn't that be heaven?? pretty sure we're having pancakes for dinner...
