mexican chicken tacos

okay. this is serious business. i'm dying over these babies. this recipe has no name, so i just made one up. it is originally this recipe, but i wanted a crock-pot version and i didn't have tomatoes. so here's what i did.

no picture today. it basically looked like this except the chicken was shredded instead of chunked. it really is the same recipe, just crock-potted. convenient, eh?

ingredients:
2 chicken breasts
1 can petite diced tomatoes
2 green peppers, diced
1 can black beans, drained and rinsed
1 tbsp. cumin
1(ish) cup salsa
1/2 pkg. cream cheese

throw it all in the crock and cook on low all day. shred chicken and serve in tortilla with cheese, avocado, and sour cream, or with chips. yum. 

we had it last night, and i had it for lunch today. and i'm wanting it again. so simple. so yummy!

BBQ Chicken Sandwiches

Want to make the easiest meal ever? Then you are in the right spot, my friends! If you've been around this blog for more than a minute, you know how easy our recipes are. However, I think this one takes the cake. Almost no prep, minimal clean-up, and still delish? Yes, please!



The first time my hubby made these, I asked what was in them because they tasted so scrumptious. His answer? "Chicken and BBQ sauce." Whaaaaaa?? Who would have thought something that simple could taste that delish! I almost feel silly even posting this because it is so basic, but it was, at one point, a new idea to me. And we all love a new idea, right? So, with that being said...

What you need:

2 boneless, skinless chicken breasts

BBQ sauce (about 1-2 cups) (Sweet Baby Ray's Original is our fave! We swear by it!)



Throw both in the crock-pot and cook on low all day, shred chicken, stir it around so it gets slathered in the BBQ (add more if needs be), and serve on your favorite roll or bun. Tada!

Easy Crock Pot Potato Soup

I hear this is a pretty good version of Outback's Baked Potato Soup, but I've never had it at Outback so I'll just take their word for it. Again, I found this recipe on another blog and just had to share it with you! We made this at my mom's on Saturday night and we were all big fans! So, here ya go!

1 30oz. bag of frozen, shredded hash browns

3 14oz. cans of chicken broth

1 can of cream of chicken soup

1/2 cup onion, chopped

(We used green onion and WAY less--about 3--we're not onion lovers!)

1/4 tsp. ground pepper

1 pkg. cream cheese

(The real stuff--Fat Free doesn't melt!)

**In a crock pot, combine everything EXCEPT for the cream cheese. Cook for 6-8 hours on low heat. About 1 hour before serving, add cream cheese and keep heated until thoroughly melted. Serve with cheese, sour cream, bacon bits, green onions, or whatever else you think would be good!

Mexican Crock-Pot

This recipe comes from our fabulous sister-in-law, Tif. I am all about an easy throw-it-all-in-the-crocker-and-go kinda meal, so I was happy to be introduced to this one. I have heard of a few names and variations of it, but here's how I do it. I put this in yesterday around 11:00, and by noon my house already smelled delicious! The other thing I like about it is that it's versatile; you can eat it in a tortilla with cheese, avocado, and sour cream (that's what we do), you can eat it like you would eat taco soup--crunch up some Frito's or tortilla chips on top, or you can eat it over rice. Either way, it is delicious! And the best part is, it makes quite a bit and the leftovers are yummy. I really don't think you can go wrong with this one!

Ingredients
2 cans corn, drained
2 boneless, skinless chicken breasts
1 pkg. taco seasoning
1/2 jar salsa (1-2 cups)
2 cans black beans, drained and rinsed

I layer it in the order of the ingredients, but I really don't know that the order matters. Cook on low all day. Mine cooked for about 7 hours. My chicken was frozen, and it turned out perfect. If your chicken wasn't frozen, it would probably take 4-5 hours. Stir everything together, shred your chicken using a fork, and eat it up.
You won't be disappointed. Trust me.

Salsa Tacos

I just threw this in and thought maybe everyone else is rushing around with last-minute Christmas details like I am, so here's something simple for tonight! All you need is 3-4 boneless, skinless chicken breasts (I use 2 because it's just me and my husband) and some salsa. I use Pace because it's our favorite, but any kind will do. Throw it in the crockpot (for 2 chicken breasts I use about 1-2 cups of salsa) and cook all day. Shread or chunk the chicken after it's cooked, stir it around with the salsa, and serve! I think these are best in the raw tortillas you cook yourself, but my husband likes them in hard shells. Serve with cheese, cilantro, tomato, avocado, and sour cream. Done! This is the easiest recipe ever, and it is so nice for when you're in a hurry and just want to throw something in. Enjoy!

Beef Stew

I have always turned up my nose at stew, but after the pickiest sister Candice stamped it with her approval, I thought I'd better try it! This recipe comes from our sister-in-law, Tif, and is quick and easy and, best of all, a crock-pot recipe. My fave!

Ingredients

1 lb. stew meat

1 can cream of mushroom soup

1 can cream of celery soup

1 can of corn--with the juice

3-4 potatoes, peeled, washed, and chunked

1 C. diced carrots

1 can (use one of the cream cans) filled with water.

Dehydrated or minced onion to taste

Salt and pepper to taste



Throw everything in the crock-pot and cook on low all day. About 5 minutes before we ate, I threw in a cup or so of frozen peas (I didn't want them to get soggy from cooking all day). The stew was really hearty and filling and a perfect meal for a chilly day!

Cream Cheese Chicken

I'm posting this recipe because it is the first recipe that comes to mind when I think about things my sisters and I cook. This recipe is a staple in all of our homes, and has even become a traditional Sunday dinner at my house. We love it, and we really love that it's so easy. Enjoy.
Ingredients
3-4 boneless, skinless chicken breasts
2 cans cream of chicken soup
1 pkg. dry italian dressing mix
1 pkg. cream cheese

Throw everything in the crock-pot and cook on low all day. Serve over rice. I've also had it over egg noodles, and it's not too bad!
