ham & cheese sliders

oh man. the holidays brought some good food. i found this recipe on pinterest, and an appetizer party at my in-laws' was the perfect place to take them. yu-um. even the next day, after a little re-heating in the oven, they were delish. we ate them as an appetizer, but eat a few with some salad and you'd have a meal. i will probably be making these for dinner soon. my husband was a serious fan!

the recipe came from this blog 

ingredients:
12 dinner rolls (i used the costco ones from the bakery)
12 slices ham
12 slices provolone cheese

sauce:
i cube butter-melted
1 tbsp. poppy seeds
1.5 tbsp. mustard
1 tbsp. minced onion

make sandwiches and place in a baking dish. mix together sauce ingredients, pour over sandwiches, and bake at 350* for 15ish minutes. serve warm.

BBQ Chicken Sandwiches

Want to make the easiest meal ever? Then you are in the right spot, my friends! If you've been around this blog for more than a minute, you know how easy our recipes are. However, I think this one takes the cake. Almost no prep, minimal clean-up, and still delish? Yes, please!



The first time my hubby made these, I asked what was in them because they tasted so scrumptious. His answer? "Chicken and BBQ sauce." Whaaaaaa?? Who would have thought something that simple could taste that delish! I almost feel silly even posting this because it is so basic, but it was, at one point, a new idea to me. And we all love a new idea, right? So, with that being said...

What you need:

2 boneless, skinless chicken breasts

BBQ sauce (about 1-2 cups) (Sweet Baby Ray's Original is our fave! We swear by it!)



Throw both in the crock-pot and cook on low all day, shred chicken, stir it around so it gets slathered in the BBQ (add more if needs be), and serve on your favorite roll or bun. Tada!

Nicki Specials

Back in the day the Howe sisters worked in a yummy little sandwich shop in Manti called Club Savoy. Man did we have some fun times there! Sadly, Club (as we called it) is no longer there but it lives on in our hearts every time one of us makes this yummy sandwich. I created it one night due to boredom and hunger. OK, mostly hunger. It became known as a Nicki Special and we still love it.


(This is just for one)

Deli bun

mayo

2-3 slices ham luncheon meat

5-6 sliced mushrooms

slice cheese of your choice

(I love swiss or provolone, but anything works)

1/2 an avocado, sliced



Sautee' the shrooms in a little butter until soft and brown. Scooch them over in the pan and add the ham--you just want to warm it up a bit. Scoop the shrooms onto the ham and lay the cheese over and let it melt!! Dump the whole thing onto the bun that you have spread with mayo. (Let me just say here that at Club we had a grill and I liked to toast the bun, but I only do that at home if I am feeling especially ambitious.) Spread the sliced avocado on top of the melted cheese and put the bun top on. Now I need to have one of these because my mouth is watering! Enjoy!

BLTA Croissants

This is a yummy twist on the classic BLT. Easy and so good!


Ingredients

Croissants

bacon

head iceburg lettuce

1 tomato--sliced

1 avocado--sliced

sliced deli turkey

mayo/mustard



You can add or take away any of the ingredients to fit your tastebuds. I didn't do any measurements because it totally depends on how many people you're feeding and how much of each thing you want.

Chicken Bacon Ranch Sandwiches



Here is a quick and easy dinner idea,

these sandwiches are very simple to make but are so delicous.


What you will need:


1 Lg. or 2 Sm. Chicken Breasts

(I buy the ones at Costco and they are giant so I cut one in half)

Buns

8-10 stips of Bacon-cooked

Avocados

Provolone Cheese

Ranch

Lettuce (optional)

Tomatoes (optional)


Trim your chicken really well and put into a large ziploc bag. Take your meat tenderizer (or you could use a hammer if you don't have one) and pound it until it's flat. You don't have to do this step if you like your meat thick, but I prefer not to have to bite into an inch of meat.



Next, salt and pepper and cook your chicken using whatever method you prefer. I use the George Forman grill cause it's super easy but you can bake it or fry it also



That is basically all there is to it. You can toast your buns and melt the cheese over your chicken if you want to. Slice an avocado and some tomatoes. Put a little bit of ranch on your bun first so it isn't quite so dry. Grant likes to put some Brianna's honey mustard on his bun. It is very delicous just don't look at the calories. Top with lettuce, tomatoes, avocados (be generous) and the bacon. Then drizzle ranch over the whole thing.



Tip: I highly recommend making your own ranch from the Hidden Valley packet using buttermilk. It is the only ranch the Howe family will eat and once you do, you won't ever buy bottled ranch again.
