Breakfast Casserole

I got this recipe from my old neighbor, Kristen. She is a great cook, and I always love getting new recipes from her. This one is super simple and doesn't involve overnight refrigeration like most breakfast casseroles. We made it for the Howe family over Christmas and they all loved it, even the kids (which says a lot considering our group).

Ingredients
15 eggs
1 C. milk
1 C. sour cream
1 1/4 tsp. salt
1 1/2 C. grated cheddar cheese
1 1/2 C. ham or sausage (I buy the packaged, diced ham, and 1 package is the perfect amount)
1 green pepper (optional)
1 pkg. fresh mushrooms (optional)

Whisk eggs, add milk, and whisk again. Add other ingredients. Melt 3 Tbsp. butter ina 9X13 pan. Add egg mixture to pan. Bake at 350* for 45-50 minutes. Knife will come out clean.

I half this recipe and make it in a 8X8 pan for my little family, and it is plenty.

Mmmm. Now I'm wishing I'd made this for breakfast. Instead, I have these in the oven. Still yummy!

Hoot-n-Annies

Hoot-n-Annies aka German Pancakes have always been a favorite around the Howe household. When I introduced Matt to them for the first time he thought he was in heaven. He would eat them every day if I'd make them, but Saturdays are about the only day he gets to eat this delectable breakfast treat. :)



There are many a Hoot-n-Annie recipe out there...

Here's our version:

6 eggs
1 C. milk
1 C. flour
2 Tbs. sugar
1 tsp. vanilla
1 cube of butter
(I was recently been told 1/2 a cube works just as well!)

**Place butter in a 9x13 pan and set in preheating oven to melt.
Mix all other ingredients into a large bowl.
When butter is melted pour the batter into the pan.
(Another option is to spoon into muffin tins for individual ones!)
Bake at 350 for 25-30 minutes until the edges are golden and fluffy!
Serve with powdered sugar and/or syrup!
(We like both, at the same time!)

Crepes

When we were little we love, love, LOVED going to our Aunt Mary's house to sleep over. First of all, she is the BOMB aunt and second of all, she always made us her famous (at least in our family) crepes for breakfast! They are simple and sweet, but we adore them!


Now whenever we get together at my mom's house the making of breakfast usually falls on my shoulders and everyone's vote is usually crepes. So here is our easy crepe recipe with a few pictures of some of the steps.

In a liquid measuring cup combine:
3 eggs
1 C. milk
1 C. flour
1 Tbs. sugar
1 tsp. vanilla

*Whisk together--I usually add a little bit more milk once I have it mixed up because you'll want your batter thin enough to spread it around your pan.

*Heat a frying pan (or a crepe pan) on medium low heat.
*Pam the pan when warm.
*Pour a small amount of batter (about 1/4 the size of your pan) in the middle or to one side.
*Roll the pan around spreading your batter evenly across the pan.
*When the edges start to curl, flip it over and cook it for 30 seconds to a minute.
*Put on a plate, spread butter, sprinkle cinnamon and sugar (pre-mixed), roll up, and EAT!

**We also love to add warm apple sauce to these and eat them with a fork.
**Also delicious with bavarian cream & fruit!

Pour the batter into a pammed pan.

Roll the pan around by the handle spreading out the batter evenly.
Flip it over when the edges start to curl (this one has just been flipped)
Spread butter and sprinkle cinnamon and sugar

Fold over one edge...

Roll it up and VOILA!
