i was just sure that this beauty had been posted on the blog before, but it has come to my attention that it has not. honestly. i don't even know who we are anymore.
this recipe reminds me of our aunt di. di is the sweetest, most awesome person you will ever meet! i don't know why this recipe reminds me of her...i think she may have been the first person to make it (not, like, invented it. just made it for me). plus, she is cool so i like to think of her. plus, i am 99% sure that we had this at one of my baby showers, but i had pregnant brain and all, so i can't say for sure. either way, it is delish and easy and affordable and those are 3 things that we find necessary in our recipes.
anyway, here ya go:
1/2 C butter
1/2 C brown sugar
3 C rice krispies
1 C coconut
1/2 gallon vanilla ice cream
in a sauce pan, melt butter and brown sugar. while those are bubbling, mix coconut and krispies together in a bowl. when butter/brown sugar mixture is blended, pour over krispie/coconut mixture and stir together. press half of the mixture into a pammed 9X13 pan. then cut your ice cream in 1-2 inch slices (we do slices because it's easiest. you can just scoop it out if you want) and cover the mixture. smooth the ice cream together with a spatula, and cover with remaining krispie/coconut mixture. freeze over night. when we serve it, we top it with hot fudge, caramel, berries, or whatever else. i actually like it plain...but it's up to you :)
